Hamburger Popovers

Serves 8

4 eggs
4 teaspoons oil
1 cup water
1 teaspoon salt
1/4 teaspoon white pepper
1 cup cake meal

1 pound ground beef
2 eggs
2 tablespoons matzo meal
½ onion, chopped
½ teaspoon kosher salt
¼ teaspoon pepper
Oil for muffin cups

In a medium-sized mixing bowl, prepare the popover batter by beating the eggs with the oil, water, salt and pepper. Stir in the cake meal. Blend well. Let rest for 30 to 45 minutes.

In a mixing bowl, stir together beef, eggs, matzo meal, onion, salt and pepper. Form the mixture into balls; set them aside on a dish.

Preheat oven to 450 degrees.

Grease 2 ½-inch muffin cups. Pour the batter into the heated cups. Put a meatball in each muffin cup. Bake for 35 minutes.
