Serves 6 to 8
6 potatoes (about 3 pounds), peeled
3 eggs, separated
Salt and black pepper to taste
3 tablespoons matzo meal
2 to 3 medium-sized onions, chopped
3 to 4 tablespoons margarine
1 pound liver, broiled and chopped
1 whole egg
In a large pot, boil the potatoes in lightly salted water until tender; drain and mash in a medium-sized bowl. Beat the egg yolks with the salt and the pepper; add to the potatoes along with the matzo meal.
Beat the 3 egg whites until stiff and fold them into the potato mixture.
In a small skillet heat margarine and onions over medium-high heat. Thoroughly mix the liver with the whole egg.
Preheat oven to 375 degrees.
Grease a 2-quart baking pan. Transfer half of the potato mixture to the pan. Pat it down to cover the entire bottom of the pan evenly. Spread the liver mixture over it and cover with the remaining mashed potatoes. With a fork, score the top of the potatoes. Bake for 30 minutes or until browned.
