8 – 10 flounder, sole or cod fillets
1 cup frozen orange juice concentrate, thawed
1 teaspoon kosher salt
½ teaspoon black pepper
1 cup matza meal
¼ cup margarine, melted
Garnish: lemon slices
Preheat oven to 500 degrees.
Combine orange juice with salt and pepper. Dip fish in orange juice mixture, then in matza meal. Place in single layer on a lightly greased baking sheet. Drizzle with margarine.
Bake for 10 minutes. Reduce heat to 350 degrees. Bake 10 minutes more. Serve with lemon slices, if desired.
