8 sole fillets
1 jalapeno, coarsely chopped
1 teaspoon minced fresh garlic
¼ cup lime juice
1/3 cup honey
2 teaspoons balsamic vinegar
½ teaspoon salt
¼ cup cilantro, chopped
½ cup oil
Lay sole fillets in a single layer in a large roasting pan. Whisk together remaining ingredients (or blend in a food processor) and pour over fish. Cover and marinate for at least 4 hours or overnight.
Uncover and bake at 350 degrees for 30 minutes.
