

Almond Flour Chocolate Chip Cookies

Serves: 18 cookies
Ingredients
- 2 cups blanched almond flour
- ¼ teaspoon kosher salt
- ½ teaspoon baking soda
- ¼ cup cottonseed or safflower oil
- 2 tablespoons honey
- 1 tablespoon vanilla extract
- ½ cup chocolate chunks
Instructions
- Combine almond flour, salt and baking soda in a food processor. Mix. Pulse in oil, honey and vanilla until dough forms. Remove blade from processor and stir in chocolate chunks by hand.
- Preheat oven to 350°.
- Scoop dough one level tablespoon at a time onto a parchment lined cookie sheet. Gently press down dough. Bake for 6-8 minutes.
- Cool for 15 minutes (do not handle prior or cookies will break)
Note: If your dough is too dry, add 1-2 tablespoons more honey
