

Passover Yom Tov days and chol hamoed seem like endless snack times. Maybe it’s the fear of being hungry or the inability to buy a quick fix from our normal stops that we load up and shlep bags of snacks each day of Passover. Here are a few of my must-have snacks that keep us filled, happy and enjoying Passover.
Granola– Delicious atop ice cream, yogurt, fruit, or as a bowl of cereal. I even use it as a topping on kugel or to give roasted vegetables some crunch.
Matza “Popcorn”- Place 3 cups matzo farfel or coarsely chopped matzo on baking sheet and spray with non-stick cooking oil or toss with 2 tablespoons cottonseed or safflower oil . Preheat oven to 375 degrees. Bake for about 12 minutes, or until lightly toasted. Remove from oven and sprinkle 1 teaspoon kosher salt. If desired, add paprika, onion powder and garlic powder too, just a pinch of each. Eat as a snack and enjoy!

Chocolate Dipped Frozen Banana Bites
No Bake Chocolate Matza Cookies- Melt 2 cups chocolate chips over medium high heat. Stir until smooth and melted. Add 2 cups Matza farfel or chopped matzo and 1 cup toasted walnuts. Roll into balls and place on a cookie sheet, and freeze for at least 8 hours.
Veggies- Cut up some fresh veggies and put in bags or containers and refrigerate, you will be surprised how fast they will be eaten up with these dips! Serve veggies with great dips like:
Almond butter and celery – Big favorite here! Spread almond butter in the center of the celery. Top with raisins or chocolate chips.
“Chips” and Salsa (or Guacamole)- Toast Matza pieces (like in the “popcorn” Matza recipe) and make some Roasted Pineapple salsa, Salsa or Guacamole to serve with it.
“Trail Mix”- Mix your favorite nuts, dried fruit and some chocolate chips and snack away! This is filling and nutritious.
