

Salmon Lettuce Wraps
This is an elegant first course or a great light menu item for a Passover day meal. I love it with roasted pineapple salsa but can be served alone or with any salsa of your choice.

Serves: 6
Ingredients
- 4 salmon fillets, or 1 ½ lbs. salmon, skin removed
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon paprika
- ¾ teaspoon cumin
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper
- 8 butter lettuce leaves
- Garnish: avocado, carrot rings, red peppers, scallions, optional
- Pineapple Salsa or other salsa
Instructions
- Preheat oven to 400 degrees. Place salmon in a 9 x 13 pan. Brush with oil and drizzle lemon juice over salmon. Sprinkle with paprika, cumin, salt and pepper. Bake for 20 minutes.
- Cool slightly. Flake salmon into bite-sized pieces. Place about ¼ cup salmon in each lettuce cup. Serve with salsa.
