

Healthier Passover Dessert: Chocolate Avocado Pudding

Ingredients
- 2 large, ripe avocadoes
- 1 teaspoon Passover vanilla extract
- ¾ cup unsweetened cocoa powder
- ½ cup maple syrup
- ¼ cup sugar (reduce if maple syrup is sweetened)
- ¼ cup orange juice
- ¼ teaspoon kosher salt
- ¾ cup HOT water
- Garnish with non-dairy whipped cream, chopped, toasted nuts, toasted coconut, or fresh fruit
Instructions
- In a blender or with an immersion blender, puree avocadoes with vanilla, cocoa powder, maple syrup, sugar, orange juice and salt. Blend until coarsely pureed. With motor running, stream in hot water, adding more orange juice as needed, until smooth and creamy.
- Divide pudding among eight (4-6 ounces) ramekins or small bowls and chill at least 2 hours and up to 3 days (cover once set).
- Serve chilled with non-dairy whipped cream, chopped, toasted nuts, toasted coconut, or fresh fruit
